The aim in making this Sauvgnon Blanc is to capture the vibrant characters that are naturally found in the grapes. To achieve this we harvest in the cool of night and cold ferment the juice with a selection of specialist yeast to capture and retain the grapes vivacious character.Fruit for the 2011 Russian Jack Sauvignon Blanc comes from our Burnt Spur vineyard located just south of the Martinborough township. Here the clay soils overlap the deeper alluvial river stones giving the wines made from this veinyard a real sense of place.Enticing,aromas of passionfruit and guava are found on the nose, followed by excellent length and a palate full of juicy acidity and ripe fruit flavours.
