PLOTS
Pure is handcrafted from a single plot of 100 year-old vines and sandy soil, named “Grand Pierre”, next to the Rayas sector.
VITICULTURE
Rigorous bud pruning. Furthermore, green harvesting and leaf thinning are done. The picking is entirely by hand, with sorting in the vineyard and again in the cellar.WINE-MAKING
Destemming of underripe stalks. The wine stays on the skins for over 4 weeks. Pumping over, rack and return, punching down the cap, and stirring the lees. The use and frequency of these techniques depend on the grape variety, plot and vintage.
MATURING
Ageing lasts approximately 18 months. The wine is not filtered before bottling. |
