| This signature blend offers a singular wine personality, a delicate alchemy of spices and well-ripened black fruits, a delight for the senses.The Grenache comes from a plot at the junction of Palestore and Bois Dauphin districts and one at the junction of Grand Pierre, Rayas and Pointu districts as well as Cabrières plots. The Cinsault come from Pierre à feu plots. Representative soils of Châteauneuf-du-Pape (yellow and red sand, red clay, large pebbles)with a high proportion of sand. Average age of the vines: more than 70 years old.Deep dark purple robe. The nose is intensely fruity with mineral notes. The mouth is beautifully rich. The tannins are structured and finely grained, sweet with exceptional elegance and finesse. Finally, there is no doubt that this vintage offers a very strong ageing potential.Wine-making in underground concrete vats. Destemming of underripe stalks. The wine stays on the skins for over 4 weeks. Gentle extraction:pumping over, rack and return, punching down the cap, and stirring the lees.Rigorous bud pruning.Green harvesting is done. The picking is entirely by hand, with a meticulous double sorting in the vineyard.66% Grenache, 14% Mourvedre, 12% Syrah, 6% Cinsault, 2% others. |
