2008 PINOT GRIS

VINEYARD PROFILE

VINEYARD: The fruit for this wine comes from our clay rich hillside Raupo Creek vineyard. Two different parcels of Pinot Gris were hand-picked on March 26th at approximately 25 Brix.

WINEMAKER NOTES

VINIFICATION: The fruit was hand-sorted before being whole bunch-pressed and then lightly settled. Wild yeast was used for fermentation, which was maintained at a slow rate by low temperatures to enhance the primary fruit characters. At around 10 Brix the wine was transferred to older French barriques to finish fermentation. The wine spent a total of fifteen months in barrel

TECHNICAL INFORMATION

The finished wine has an alcohol of 14.5 percent, pH of 3.45, 7.0g/L titratable acid and 18g/L residual sugar.
