2008 TATOU PINOT NOIR

VINEYARD PROFILE

This wine is made entirely from Pinot Noir grown in our Tatou vineyard which is located at the western end of the Wairu Valley on stony free draining soils. Each vine is thinned to carry one-bunch per shoot. The certified organic fruit was hand-picked on April 20th.

TASTING NOTES

"The 2008 Tatou Pinot Noir is off 10 year old vines from a single vineyard of the same name. Matured 15 months in French barrique, 30% new, it gives a deep ruby color and is intensely scented of black cherry, mocha, some violets and powdered cinnamon with a little mace. Full bodied with medium-firm fine tannins and crisp acid, this wine is concentrated, tight-knit and gives a long, promising finish. Consider drinking it 2013 to 2016+."92 points -Robert Parker

WINEMAKER NOTES

The nose exhibits aromas of soft red and dark fruit, with undertones of spice and earth and dried herb and savoury notes. The palate is concentrated, and rounded, grainy tannins carry the elegant fruit.

CELLARING POTENTIAL: This wine has the potential to improve over the next five to ten years.

HARVEST NOTES

The fruit was hand-sorted before being de-stemmed and cooled, after a pre-fermentation soaking period the juice was allowed to warm and fermentation started with wild yeast. During fermentation the caps were hand-plunged daily. The wine was then left to sit on skins for two and a half weeks of post ferment maceration; a total of four weeks was spent in contact with the skins. The small volume of wine was then drained and lightly pressed before being transferred to French barriques, of which approximately thirty percent were new. The Tatou Pinot Noir went through natural malolactic fermentation during fifteen months spent maturing in barrel, before being bottled unfiltered and without fining.

The finished wine has an alcohol of 14 percent, pH of 3.44, and 5.70 g/L titratable acid.
