WINEMAKER NOTES

Vinification
100% Sauvignon Blanc
- long and soft pressing (4h30m) with separation of the juice separating the pressings
- settling after 24 hours at cold temperatures
- 90% fermented in stainless steel and enamel tanks at low temperatures
- 10% fermented in new half-hogshead (600L) barrels
- some lees stirring
- remains in tank & hogsheads for 5-6 months before bottling
- lightly filterd prior to bottling
