TASTING NOTES

Bouquet of red fruits with a touch of vanilla. Expressive on the palate, round and silky structure reveals soft tannins and restraint. Beautiful dominat re fruit, raspberry, cherry fruit flavors with balance, elegance, and finesse.

WINEMAKER NOTES

Destemming: 100%
Maceration: cold (8 ° C) for 5 to 7 days
Fermentation: with punching down and pumping very carefully
Maceration: 25 days
Racked - pressing and-run juice is racked and assembled
Ageing: 50% in barrique 1-5 yrs of age, 50% in stainless steel tanks, for 8 to 9 months
Malolactic fermentation : happens naturally in the spring
Blended - in summer and allowed to rest 2-3 months before bottling
Bottled: Unfined and unfiltered
