Triennes' flagship red wine is a blend of Syrah, Cabernet Sauvigon and Merlot. The first red wine produced was a blend of Syrah and Cabernet Sauvignon. Making a reference to Triennes’ location, they called the wine Les Auréliens. Later a reserve version was produced only to discover the word “reserve” is not allowed for Vin de Pays. So the name had to change. It felt natural that the counterpart to Les Auréliens should be Auguste (remember Aurelius Augustus). The friends opted for Saint Auguste because the celebration of St Auguste is on February 29th (think leap year) and this is a wine not produced every year.Soil Composition: Limestone and Clay
30km north of the Mediterranean,at 400m in altitude, Triennes has a Mediterranean climate during the day, dry,sunny and warm, but cools down radically at night, resulting in wines that have naturally high acidities and fresh fruit characteristics.A dark, dense wine with purple hues, it shows spicy aromas combined with ripe fresh fruit. The palate is rich and full of life with plenty of structure. This is a wine that needs some air to truly open up and show its best.Fementation info: Cold soak only on the Cabernet. None for the Merlot or Syrah. Whole berry fermentation. Pumpovers, shorter and shorter as the fermentations progress and the alcohol rises. Malo-lactic fermentation is in tank immediately after pressing. Wine is transferred to barrels at the begnning of winter for 12 months.Aging/Oak: Allier Oak barrels, ranging from 2-6 yrs old (ex Dujac Barrels) 12 month èlevage in barrel, followed by 10 months in tank. Varietal blend: 50% Syrah, 40% Cabernet, 10% Merlot. Case production: 2300 Alcohol: 13.8% Residual Sugar: 2.1g/l ph: 3.54 |
