HARVEST NOTES
Wine harvest is done by careful hand selection when the grapes are mature. The pergola vines are 40 years old, the spalliera ones with 2500 plants per ha on the other hand are 8-10 years old.

Part of the garpes, about 30%, are left to dry on wooden plateaux for 30-40 days during October-November. Vinification occurs separately with the wine makers system.

Refinement takes place for 14-15 months in French barriques followed by a minimum of 6 months in the bottle.
