Once upon a time…this is how fairy tales usually begin. But sometimes real life is a fairy tale, and that is the case for Marion and Manfred Ebner-Ebenauer. While the Ebner-Ebenauer label was born in 2007, when the two winemakers decided to share their lives, the history of winemaking in Manfred’s family stretches back fourteen generations. Today Ebner-Ebenauer is a mixture of old and new. The 400 year old cellar and modern style of the careful winery renovation. Traditional winemaking, gravity fed, gentle pressing. Using new methods when appropriate. “Respect the traditions but change if not useful.”

Vineyard Profile
Viticulture in Poysdorf began about 800 years ago on the steep slopes of Ried Hermanschachern.

- Soils: Loess with very extremely high fossil limestone content

Harvest Notes
- Grapes hand harvested at mainly Spätlese level ripeness, although the grapes could mature further
- 12 hours skin contact, then pressing
- Only indigenous yeasts – spontaneous fermentation
- Juice ages 6 months on fine lees
- Wine then filtered and further aged in stainless steel tanks
- Bottled in May
Winemaker's Notes
Elegance and dynamic tension hold the foreground in the wine. Refined aromas of white pepper, ripe apple and tropical fruit. The juicy, apple-y fruit and powerful, well-structed texture are accented by mineral salts on the palate. Full-bodied and commanding, the wine remains luxuriantly soft, with well-structured texture on the palate and a crisp interplay of fruit and acidity that remains extremely persistent.
A classic for baked dishes and traditional rustic fare. Also magnificent with raw or cooked fish.

A flinty touch of reduction on the shy nose signals both youthfulness and ageability. The palate is bright, fresh, juicy and vivid, revealing its inherent, peppery savoriness slowly but surely. The taut yeastiness holds white pepper and salty, nori seaweed. This is superfresh and utterly appetizing.

The 2019 Grüner Veltliner Hermanschachern is pure, lean and fresh on the still pretty reductive nose that reveals earthy and peanut notes. Round and juicy on the palate, this is a medium-bodied, firm and elegant Grüner with a finely tannic and phenolic finish. This is a very good wine to have with fish and white meat. Tasted in April 2021. 2022 – 2032
