Grower Website Domaine du Triptyque Region:

Domaine du Triptyque is a young organic winery created in 2023 in Chablis AOC. The winery is located in Venoy, in the hamlet of Montallery, southeast of Chablis with vineyards in Beines, Courgis and Chablis. When Tommy Chevallier’s father and uncle retired, he seized the opportunity to take over some of their farmland and vineyards. Originally a thermal engineer, he went to school in Beaune to develop his skills in enology and winegrowing, and gained harvest and winemaking experience with nearby estates.

Triptyque is built on three pillars: nature, wine and art. The art component is literal: Chevallier commissions artists to create the label imagery. He farms organically, using homemade organic compost, and focuses on soil preservation and pruning to complement the flow of sap within the vines. Winemaking is decidedly non-interventionist. Fermentations are slow using only native yeasts. Tension, acidity and terrior-specificity are paramount. A new, bio-focused and energy efficient winery was completed in 2024, using bio-sourced materials, with miscanthus straw insulation and solar panels to limit its environmental impact. Tommy is committed to promoting biodiversity and human values in cooperation, and is a member of the “Bio Bourgogne” organization.

Domaine du Triptyques’s estate vineyards in Beines, Courgis and Chablis are carefully tended to reveal their own identity in the wines. The plots lie between 722 and 853 feet. Soils range from stony clay to coarse marl over Kimmeridgian limestone. Farming is France-certified organic, without herbicides, using homemade compost from a neighboring farmer and the winery’s own alfalfa. Copper and sulfur only for permitted organic disease control. Mechanical soil cultivation and limited use of leaf-trimming to provide shade. Guyot Poussard vine training balances sap flow on both sides of the trunk and promotes bilateral growth. Chevallier began farming the plots in 2018 and founded Domaine du Triptyque in 2023. Organic (France) certification was obtained in 2022.

The vineyards are exclusively hand harvested, and only native yeasts are used. Chevallier employs long, gentle élevage of 12-18 months, and aging in a variety of vessels: stainless steel, concrete, old oak barrels, terracotta amphora. He adds minimal sulfur and uses little to no new oak. The wines are generally unfined and only some lightly filtered before bottling. The bio-focused, energy efficient winery building was completed in 2024.
