  • Fermentation: Vinification in cement tanks with ambient yeasts Fermentation over 18 – 21 days with Delestages and several daily punchings-down of the cap
  • Ageing: Elevage takes place in large 25 hl Fontainebleau Forest French oak casks for 12 months
  • Bottling: The wine is bottled without filtration
Winemaker's Notes
  • Colour:  Dark ruby red
  • Bouquet: Lovely bright brambly fruit aromas with overtones of mocha
  • Taste: Bright currant fruit and dark cherry flavours, with a savoury edge. There is a lovely freshness thanks to lifted acidity that is a hallmark of Barbera and a long finish
  • Pairings: Salami, pasta dishes
